Medium purple in color, this 2018 Cabernet Sauvignon displays elegant notes of concentrated blackcurrant, fresh split cedar, raspberry, black cherry, and a hint of violet on the nose.  On the palate, this 100% Cabernet Sauvignon reinforces our decision to not blend this wine, but instead, to showcase the contours of this well-integrated wine all on its own.  Velvety tannins greet your tastebuds with notes of red fruit, including cranberry, raspberry, mixed-berry jam, prune, and on the finish, qualities of cacao nibs and baking spices appear to provide a lasting mouthfeel.  If looking for a food and wine pairing, this 2018 Cabernet Sauvignon goes well with the classics – think burgers, grilled or roast meats, braised short ribs, portobello or porcini mushrooms, cheesy polenta, gorgonzola, and hard cheeses.
